Sunday September 29th: Slammin’ Sushi
Have you seen the movie Jiro Dreams of Sushi? *deep sigh* There has always been a special place in my heart for sushi, yet I fell in love with it even more after I watched that movie. Why have I such admiration for it? The quality of ingredients are showcased. There is no place for it to hide if it is not good. Learning how to source and detect quality ingredients, preparing them simply, and presenting them beautifully is the epitome of respect in every step involved. You don’t have to be a Slow Food member to attend. Bring a partner, a friend, or come solo and learn something new about sushi.
This class takes place in my (Jessica Bongard’s) home kitchen located in Jericho, VT. We will be taking a simple and unique approach to assembling sushi. It’s all about developing your own personal style and aesthetics. So roll up your sleeves and bring a bamboo rolling mat if you have one. Slow Food VT members get a $5 cash in-hand discount upon arrival.
Nigiri - Maguro (Tuna) and Ebi (Shrimp)
Oshinko Maki – Pickled radish roll
Saishoku Saimaki – Mixed vegetable roll with an avocado wrap
Temarizushi – Thickly sliced Tuna, Salmon and Avocado over a ball of rice
Wasabi “leaves,” pickled ginger, soy sauce and artful garnishes of roe and sesame seeds will accompany these dishes.
