It single-handedly flipped a switch in my brain to go certifiably insane for the love of an ingredient unbeknownst to me until that moment. And that isn’t the only one. Vermont is full of incredible people doing incredible things with dairy and this class is a way to join that party.
This class is a fundraiser for Slow Food Vermont, a fantastic network of people who support Good, Clean and Fair access to our food systems. All profits are going directly to our local chapter. We’ll be making and eating our way through some profoundly delicious dairy products made with VT raw milk.
Radishes & Butter - we’ll be making that butter and promptly eating it on radishes with herb salt
Fava Bean Tartine - featuring your freshly made fromage blanc, lemon vinaigrette and herbs
Creme Fraiche - so simple you’ll cry while eating it with sweet and savory nibbles
Ricotta Two Ways - savory version: in a crespelle (similar to a crepe) with rainbow chard. sweet version: served alongside red wine baked peaches
Much like a disco ball, you’ll leave this class spinning with smiles sparkling for your new ability to make some serious dairy products to share, or to hoard all yourself.”
